Healthy Snix Bars

What is 'Snix' you ask? Well, Snix is just the greatest invention ever and an absolute game changer when it comes to chocolate bars.. oh and did I mention that they are 100% vegan, gluten free, refined sugar free, guilt free AND delicious?! Need I say more??


Okay so 'Snix' is a combination of Snickers and Twix (aka Snix, Twickers, or what ever you want to refer to them as). Here's a breakdown: we start with a delicious biscuit base, followed by a gooey oozy caramel, topped with crunchy peanuts and then coat the entire bar in rich creamy chocolate.. ummm yes please!




The following recipe gave me 10 extremely decent sized chocolate bars, all of which were eaten within 24 hours (standard). Here's how you make them:


Biscuit Base:

1/3 cup almond meal

2/3 cup oat flour

1 tbsp cold pressed coconut oil

3 tbsp rice malt syrup (or liquid sweetener of choice)

Small pinch of pink sea salt


Caramel Layer:

8 juicy medjool dates (NOT sun-dried dates)

2 tbsp cold pressed coconut oil

1/4 cup peanut butter (or your preferred nut butter)

1 tbsp maple syrup (or liquid sweetener of choice)

3 tbsp date water (aka the left over water after the medjool dates have been soaked)

Pinch of pink sea salt

Small handful of peanuts

Chocolate Layer:

3 tbsp cold pressed coconut oil

3 tbsp maple syrup (or liquid sweetener of choice)

1/3 cup cacao powder

1 tbsp peanut butter (or your preferred nut butter)

Pinch of pink sea salt
