Choc Chip Cookie Dough Easter Eggs

If you think there's nothing better than store bought easter eggs, you need to think again. I'm about to share with you one of my best recipes yet. This is one that you'll want to save, because I have a feeling you'll be making this one all year round...


Last week I was thinking about what I could make for Easter that would satisfy my sweet tooth and also make me feel as though I was indulging in something that's #naughty. Then it hit me. What if I were to combine my two favourite things: choc chip cookie dough and chocolate? Well, let me tell you, this was the BEST idea I've had in a long time.



My Choc Chip Cookie Dough Easter Eggs are the perfect Easter treat to make if you are: addicted to sweets, time poor, on a budget, wanting to indulge but also stay healthy, and also if you're wanting to make something to give as a gift.


Easter doesn't have to be a weekend of overindulging on sugar and making yourself sick. It also doesn't mean that you have to avoid chocolate / treats altogether. With this recipe, you'll be able to enjoy the Easter period with your loved ones guilt free!



VEGAN | GUILTY FREE | REFINED SUGAR FREE | GLUTEN FREE

Makes 10-12 eggs (this will differ depending on the size of your eggs)



Ingredients:

For The Cookie Dough:

1/4 cup of almond butter (any nut butter will work)

1/4 cup of coconut sugar

1/2 tsp of vanilla powder / essence

2 tbsp of coconut milk (or any other nut milk)

1 tbsp of maple syrup

1/3 cup of coconut oil

1/2 cup of coconut flour

1/3 cup of almond meal

Pinch of Himalayan sea salt

1/2-3/4 cup of vegan chocolate chips (I used Loving Earth caramel and dark chocolate)


For the Chocolate Coating:

4 tbsp of coconut oil

4 heaped tbsp of cacao

4 tbsp of maple syrup

1-2 tbsp of almond butter (or other nut butter of choice)



Method:

  1. In a large mixing bowl, add the almond butter, coconut sugar, vanilla powder, maple syrup, coconut milk and coconut oil, and mix until all of the ingredients are well combined.

  2. Next, add the coconut flour, almond meal and salt, and gently mix them into the wet mixture until it forms a dough like consistency.

  3. Add in the chocolate chips and gently mix them through the cookie dough.

  4. Using your hands, roll the dough into small eggs and place onto a lined tray. Once all eggs are made, put them in the fridge whilst you make the chocolate coating.

  5. Over a low heat, add the coconut oil, cacao and maple syrup to a small saucepan and gently mix until all of the ingredients combine.

  6. Stir in the almond butter, turn off the heat and pour the chocolate into a bowl.

  7. Take the eggs out of the fridge and coat them in the chocolate one by one. When you're finished, keep any left over chocolate aside.

  8. Put them back into the fridge and allow the chocolate to set to a few minutes.

  9. Lastly, take the eggs back out of the fridge and drizzle over the remaining chocolate (for this, I had leftover Loving Earth caramel chocolate from the cookie dough, so I melted this down and used this as well).

  10. Store in an airtight container and keep out of sight from any chocoholics.
